If this is the kind of drivel used to train nursery school teachers these days, I feel sorry for them.

Not sure exactly what you are asking... The adult can interact by setting out new props or experiences or let the children take the lead with their own ideas- to me appropriate means discussing with the children what they are doing and allowing them to carry out their own ideas. But it helps to give the children new prompts when needed. Here are some props and experiences you could set up for the children to do with you...
Bury "treasures" like shiny rocks or toys to dig for
Use eye droppers with water dyed with food coloring to make pictures in the sand
Create designs with rocks and shells
Use funnels, buckets, bowls, spoons, and other tools to create a "factory" or "store" put a table near the sand and let them set out their goods.
Combine water and sand and make islands.

Extend learning & promote discussion & introduce new vocabulary such as soak, full, empty, more, less etc
You could try ading water & washing up liquid to see what happens.
Provide various objects that you wouldnt necessarily find in the sand tray such as cartons & packaging to fill.

Seriously? Its not that hard, things like.

make a sand castle. You make a sand castle with them, then see if they can do it on there own, with guidance and praise.

adding water, showing the children the change in consistency. how it can flow or be solid.

showing them that sand can hide things, such as your hand.

use a mill wheel thingy. to show that sand can push things, as you would in water play.

build different terrains such as hills and flat parts.
