with avocados....something like a green salad with avocados in it....

I like putting the slices on sandwiches and grilling them. Or making an orzo salad with spinach and putting some avocado chunks in it with a lemon or Italian dressing. Or just eating them with a spoon!

Spicy king prawn avocado salad
Serves 2

Ingredients
6 large cooked king prawns
2 avocadoes
½ lemon, juice only
½ tsp cumin
½ tsp salt
¼ tsp freshly ground black pepper
½ tsp extra virgin olive oil
For the dressing
150ml/5¼ fl oz mayonnaise
50ml/1¾ fl oz ketchup
2 dashes Worcestershire sauce
1 dash Tabasco sauce
½ lemon, juice only
1 clove garlic, crushed

Method
1. Cut the avocados in half, removing the skin and stone. Slice into four lengthways and arrange on a plate.
2. Toss the cooked, cold prawns in the lemon juice, cumin, salt, black pepper, and olive oil and place on top of the avocados.
3. Mix all the ingredients for the dressing in a bowl and drizzle over salad.
4. Serve immediately.

OR Avocado and orange salad
Ingredients
1 tsp coriander seeds, crushed
40g/1½oz caster sugar
1 seville orange, juice only
3 sweet oranges , 1 juice only, 2 peeled and sliced thinly
1 tbsp olive oil
salt and freshly ground black pepper
3 large avocados
bunch watercress
50g/2oz black kalamata olives, bought stone in, pitted and halved
a few leaves of mint and coriander
6 slices streaky bacon, cooked until crisp (optional)
salt and crushed black pepper



Method
1. Tip the coriander in a small pan, add the sugar and the orange juices. Bring to the boil and allow to simmer gently for a few minutes.
2. Remove from the heat and add the oil, stirring briskly. Cool and season to taste.
3. Shortly before you want to eat, peel, halve and remove the stones from the avocadoes. Cut in thin slices and coat with the dressing.
4. To serve, lay the watercress on a platter, arrange the slices of avocado and oranges on top, scatter with the olives and herbs. Finally, top with the bacon slices, if using. Season.

Try this one out-something different..

CHILLED AVOCADO SOUP

Ingredients:-

-4 ounces sour cream
-2 avocados, peeled, seeded and puréed
-6 3/4 ounces green chilies, puréed
-1/2 tablespoon garlic powder
-1/2 quart light cream
-1 cup heavy cream
-1/4 onions, puréed
-1 ounce chipotle chile pepper, puréed
-1 cup whole milk
-to taste salt
-to taste while pepper

Method:-

Combine all ingredients into a large mixing bowl and mix well. Allow to chill overnight to let the seasonings blend before using.

I love 'em. They are great on sandwiches (try some slices on tuna sandwichs or one made with leftover Thanksgiving turkey, and sooo good on hamburgers), and I've been known to even just eat them as is with only soy sauce.

Try this with pita chips or tortilla chips:
INGREDIENTS

* 2 plum tomatoes, chopped
* 1 ripe avocado - peeled, pitted and chopped
* 1/4 cup finely chopped red onion
* 1 clove garlic, minced
* 1 tablespoon snipped fresh parsley
* 1 tablespoon chopped fresh oregano
* 1 tablespoon olive oil
* 1 tablespoon red or white wine vinegar
* 4 ounces crumbled feta cheese

DIRECTIONS

1. In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

Here's a salad dressing made from avocados that is great, but I always thin it down some with some milk, use feta cheese instead of blue, and add a dash of chili powder:

I have never eaten an avocado. How weird is that? I am putting that on my things to do list for 2007.

When my step-mom went to Mexico she was served with avocado in her soup. She decided to try this when she came back. She put it in her homemade chicken soup and it was amazing.

Here are my 3 TOP choices for avacodo salads... enjoy! (not in any specific order)

Avocado Citrus Salad
Ingredients:
Dressing
2 limes
2 tablespoons sugar
Dash of salt
2 tablespoons vegetable oil

Salad
1 firm, ripe avocado, peeled, seeded and sliced

2 cups torn romaine lettuce
1 large orange, peeled and cut into sections
1/4 small red onion, sliced into thin wedges
2 tablespoons snipped fresh cilantro (optional)


Directions:
1.For dressing, zest limes to measure 1 teaspoon zest; juice limes to measure 1/4 cup juice. Place zest and juice in small bowl. Add sugar, salt and oil; whisk until blended. Cover; refrigerate until ready to use.
2.For salad, using Avocado Peeler, cut avocado in half lengthwise; remove seed and cut flesh away from skin. Cut avocado into slices.
3.Arrange lettuce, avocado slices, orange sections and onion on small plates. Drizzle with dressing. Sprinkle with cilantro, if desired.
Yield: 4 servings

Barbecue Chicken Cobb Salad

1 (16 oz) pkg iceberg lettuce salad mix
1 large cucumber
1/2 small red onion
1 avocado, peeled
2 medium tomatoes, seeded
3/4 cup shredded cheddar cheese
1 lb boneless, skinless chicken breasts
Salt and coarsely ground black pepper
1/2 cup barbecue sauce
3 slices bacon, crisply cooked, drained and crumbled (optional)
1/2 cup ranch salad dressing

1.Place lettuce in Simple Additions Large Bowl. Score cucumber using Lemon Zester/Scorer. Cut cucumber in half crosswise and remove seeds using The Corer. Slice cucumber and onion using Ultimate Slice & Grate fitted with v-shaped blade; cut cucumber slices in half using Chef's Knife. Using Avocado Peeler, cut avocado in half lengthwise; remove seed and cut flesh away from skin. Dice avocado and tomatoes using Chef's Knife. Arrange cucumber, onion, avocado, tomatoes and cheese in diagonal rows, leaving a row open down center. Cover; refrigerate salad until ready to serve.

2.Prepare grill for direct cooking over medium coals. Cut chicken into 1-inch cubes; thread onto four 12 inch skewers and season with salt and black pepper. Place kebabs on grid of grill. Grill, covered, 10-12 minutes or until chicken is no longer pink in the center, turning occasionally with Barbecue Tongs and brushing wit barbecue sauce using Barbecue Basting Brush. Discard any remaining barbecue sauce. Remove chicken from grill; cool slightly and remove from skewers.

3.Arrange chicken down center of salad; sprinkle with bacon, if desired. Drizzle dressing over salad; toss gently and serve immediately.

Makes 8 servings.

Southwestern Salad
Ingredients:
Dressing
3/4 cup (175 mL) ranch salad dressing
1 jalapeño pepper, seeded and finely chopped
2 tsp (10 mL) taco seasoning
1 tbsp (15 mL) lime juice

Salad
1/2 cup (125 mL) pitted ripe olives, sliced
1 cup (250 mL) diced red bell pepper

1 pkg (10oz/300g) torn romaine lettuce
1 cup (250 mL) black beans, drained and rinsed
1/2 cup (125 mL) whole kernel corn
2 cups (500 mL) diced cooked chicken
1 ripe avocado, peeled, seeded and diced (optional)


Directions:
1.For dressing, combine salad dressing, jalapeño pepper, seasoning and lime juice in small bowl; whisk until well blended. Refrigerate until ready to use.
2.For salad, slice olives and dice bell pepper on Cutting Board. In large serving bowl, combine lettuce, olives, bell pepper, beans, corn and chicken. Pour dressing over salad and toss gently to coat. If desired, top with avocado. Serve immediately.
