Chili...cook up some meat, and dice small or shred, add canned tomatoes, some onion, chili powder, seasonings, garlic, any kind of beans you have (black, kidney) and let it cook away while you're doing something else. It's quick and easy, and you probably can make a chili with things already in your kitchen.

I have no idea what you have in your kitchen cupboards or refrigerator...so I'm just going to tell you what I'm having for dinner, which is very quick and easy to prepare.
You'll need the following:
Portabello Mushrooms, Roma Tomatoes, Baguette Bread, Olive Oil, Garlic, and some Mayo.
Simply pour a little Olive Oil into a sauce pan, crush up a couple cloves of garlic and heat to medium. Chop up your Mushrooms and toss that into the pan...cook for about 3-4 mins, and while that's going on...chop up your Tomatoes...and then right before the Mushrooms are done...toss the Tomatoes into the pan and coat/heat for like 30 seconds. Take off the heat. Cut your Baguette in half...slather on Mayo to taste, and put the Mushroom and Tomato between both slices and eat. Viola...you've just made a fantastic Portabello Mushroom and Tomato sandwich. Enjoy.

Last week I made Salsa Chicken. Take chicken breasts, put on a cookie sheet wrapped in foil or whatever (with the foil there is pretty much no clean-up).
Sprinkle both sides of chicken with taco seasoning, cover top of chicken with salsa, cook at 400 for 20 minutes or until cooked through (depends on size of chicken and oven temp). After taking out of oven, top with cheddar cheese.
Have a salad or something else quick with it and you're set.

Cous cous and steamed fish
Boil the cous cous with some lemon juice and black pepper and fines herbes and steam the fish in a silver foil package for a out 20 minutes with some butter.
Tip the butter over the cous cous and add a little more lemon juice and a fresh chopped tomato... Mmmmm.

Chicken and Rice casserole
4 chicken breasts (boneless skinless)
1 cup rice
2 cups milk
1 can cream of chicken
1 can cream of celery.
Place chicken in a casserole dish. Combine the rest of the ingredients and pour over chicken. Bake @ 350 for an hour.
Serve with whatever you want.

can't go wrong with pasta and a little chicken or fish in a creamy mushroom sauce or tomato based sauce. rice is also ready in 15 mins add powdered soup and onions and mushrooms yum

why dont you make a stir fry or chicken chow mein they are very simple and quick to make. you can put anything you want in them too!
