Keep in mind, my parents are pretty health conscious right now (both on life-long diets) and I want to make something that everyone will love. My 14 year old sister is a vegeterian as well. THANKS FOR YOUR HELP!

Get acorn squash, cut in half, fill cleaned cavity with a little butter and brown sugar. Bake in the oven for about an hour. They're delish, and very full of fiber and vitamins!

I would have to go with Sweet Potatoes. 6 medium

Boil the potatoes till tender-firm. cool for 15-30 minutes then while still warm peel the skins off.
Then slice into 1/4" thick slices and lay slices in bottom of greased pan. sprinkle with brown sugar and butter- you can use lowfat butter. Then continue the layers till the potatoes are gone using the brown sugar and butter. Some people sprinkle mini marshmallows on top. thats up to you.

Bake at 350 till bubbly- 20-30 min.

This recipie you can alter to be very healthy. Use low fat butter and splenda brown sugar if you like. The amounts of sugar or butter is up to you depending on how sweet you like them.

2 boxes chopped broc.
2 cans cream of celery, m.room or broc. soup
thaw and mix the two
on top cover all with the kraft amer. chs. singles
make one box of stove top as per the directions
spread over the top
bake at 350 till hot
and any seasonings you perfer
quick and easy (and cheap to make)

Sweet Potato Mash always works like a treat and is so yummy and good for you plus is vegetarian

im not sure how healthy they are but green bean casserole is always a favorite of my familys and also my mom makes this baked corn dish that is really good, i think its corn eggs and milk and then just bake it. good luck happy thanksgiving
