Give him something you would buy for anyone else. It's not customary to give something related to Judaism to a friend nor is it necessary.

What would be appropriate? The same things you would normally buy as a chirstmas present or a birthday.
I was raised Jewish and always got things like clothes, music and games etc.

Not Jewish American but I liked a holiday gift I gave to a good Jewish friend and her kids. We made them a very beautiful gingerbread house. (It's winter..not Christmas.) They loved it.

It would help if we knew how old you both are .
Anyway, anything from the heart that you would send to a good friend is always appreciated.
Remember to check the date.Chanukah begins this year at sunset on December 15th.

A nicely carved jewlery box or a stained glass assortment would be nice.
