Be really English and try cucumber sandwiches (best eaten in summer on the lawn).

Peel cucumber, slice thinly and soak 15 minutes in water with salt (1 teaspoon)and vinegar (1-2 tablespoons). Rince and pat dry.

Butter thin white bread slices with good salted butter (margarine or low fat spread doesn't do for the authentic) and lay on cucumber slices about two thick. Cut off crusts and quarter slices to make delicious mouhtfuls. Enjoy.

How about Soft Cream Cheese and Pickled Walnuts for a treat, the colours of white and black in a sandwich are amazing.

What do you like? You could try egg mayo with chopped crispy bacon. Or tuna with chopped mixed peppers and a bit of mayo. Or sliced smoked salmon with a blob of cream cheese. Or tinned salmon with a dollop of sweet chilli sauce. Or a nice bit of chicken breast and salad. Unfortunately, they should all be kept in the fridge.

Or what about little mini sausages/chicken strips with a little pot of ketchup/BBQ? Cook them the night before and allow them to cool before putting them in your lunchbox.
