As a cook, I think you should definitely be honest. Cooks have to keep their quality of food up in order to keep their reputation. You can be honest without being harsh. As long as you're specific as to what you don't like about it (too spicy, too bland, not hot enough, to sweet), cooks will understand. They will actually be grateful for the criticism as long as its not too harsh-sounding.

No. Just eat it and at least pretend to enjoy it. I happen to be an excellent cook who always seems to be the one to prepare meals for other people. So when someone takes the time and makes the effort to cook for me I always appreciate it, no matter what the food tastes like. I would never be critical of another person's cooking. The main thing is at least they tried!

Honesty is still the best policy. What if the cook thinks the dish is great because you said it's great and then serves it to others and they tell her the truth? Then you've not only lied but you caused a great deal of embarrassment and your friend has lost trust in you.
You can answer honestly without being hurtful.

Yes! I'm serious about my cooking, and if someone doesn't like something, I want to know why, so next time around, I can fix it. If it's just a certain ingredient they don't like, well, tough luck, because I can't change their tastes I'll just know not to serve them that next time around. However, if it is something I did wrong, if something is dry, chewy, hard-I want to know!! You can't fix it if you don't know something is wrong! But a good cook will always know when they screwed something up-I am my own worst critic!

Always be honest with them because you don't want them thinking it's good when its not. Then, they will end up making it for other people. You don't have to be mean about it just say something like, this is too salty..or maybe..why don't you add some of this spice or that spice. That way you can fix what's wrong with it without hurting their feelings.

If I was the cook I would definitely want you to be honest so that I could adjust the recipe next time I made it.

Tell them the truth but be careful with the words that you use. Remember it isn't what you say but how you say it. Tell them that maybe they did... fill in the blanks with what you think could have gone wrong. Just try to remember to be tactful. And never spit anything out, even if it is that bad.
