I love to make serveral type of candies for the holidays and wrap them up nicely as gifts. I am lokking for some new ideas. Here and easy on I'll share:

Take medium size pretzels and lay them out on a cookies sheet lines with wax paper. Place one rolo candy on top of each pretzel. Put them in the oven for just a few minutes so the rolo melts over the pretzel. As soon as you take them out of the oven top them with a pecan half. You've got easy turtles!

THESE ARE WONDERFUL RECIPES. HOPE THESE HELP!

Peanut Brittle
1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda
DIRECTIONS
Grease a large cookie sheet. Set aside.
In a heavy 2 quart saucepan, over medium heat, bring to a boil, sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
Remove from heat; immediately stir in butter or margarine and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.


Peppermint Chocolate Fudge
2 cups milk chocolate chips
1 cup semi-sweet chocolate chips
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
Dash salt
1/2 teaspoon peppermint extract
3/4 cup crushed hard peppermint candy
DIRECTIONS
In saucepan, over low heat, melt chips with EAGLE BRAND® and salt. Remove from heat; stir in extract. Spread evenly into waxed paper-lined 8-or 9-inch square pan. Sprinkle with peppermint candy.
Chill 2 hours or until firm. Turn fudge onto cutting board; peel off waxed paper and cut into squares. Store covered in refrigerator.


Chocolate Covered Cherries
60 maraschino cherries with stems
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating
DIRECTIONS
Drain cherries and set on paper towels to dry.
In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.


Candy Bar Popcorn
1 (3.5 ounce) package microwave popcorn
1 king size bar chocolate-coated caramel-peanut nougat candy
DIRECTIONS
Pop the popcorn according to the package directions. While the corn pops, cut the candy bar into 1/2 inch pieces. Spread the popped corn onto a microwave-safe platter (I like to use paper plates for easy clean up). Top with candy bar pieces. Heat on full power in the microwave at 30 second intervals, or until candy is melted.

Thanks for the recipe, I'll be using that one. That should be very easy to do in the microwave and the microwave is good for candy making.

Fudge in the microwave, takes about 5 minutes.

1lb. confectioners sugar.
1 cup bakers cocoa
1 stick real butter.
1 tsp. vanilla
1 tsp. salt.
1 cup chopped nuts (necessary, but use the kind you like. I use walnuts or pecans.)

Sift together confectioners sugar with cocoa and salt in micro-safe bowl Break the butter into 4-5 pieces and throw on top. Add vanilla, no need to stir at this point. Microwave for about 1 minute until butter is completely melted. Stir mixture until it is thoroughly mixed and add the nuts. Pour into square pan that has been lined with wax paper. Let stand for few hours to harden and you can put in frig if you like.

Buckeye balls, these are really good my kids loved them last year. and this recipe makes tons of them.


4 (16 ounce) jars peanut butter
3 1/2 (16 ounce) packages confectioners' sugar
1 cup butter, melted
3 (12 ounce) packages semi-sweet chocolate chips
2 tablespoons shortening
DIRECTIONS
Blend together the peanut butter, sugar and melted butter. Allow to chill in refrigerator.
Roll into 1 inch round balls and return to refrigerator.
In a double boiler over medium heat, melt the chocolate and shortening. Whisk together until smooth.
With a toothpick inserted in the balls, dip them into the chocolate so they look like buckeyes. Place on waxed paper and allow to set in refrigerator.
