i made a cooked ham last night; i remembered to cover it but forgot to refrigerate it. is it safe to eat it today?

I would not take the risk, if it was me I would throw it out.

If it's cured ham, it might be ok. I wouldn't advise eating any meat left out overnight though. The only exception would be dried meat, ie: jerky. Even if the meat contains a lot of salt, it's not safe. It also contains water. Room temperature air and the moisture from the ham makes for a bacterial breeding ground. At worst you could become violently ill. At best, just some bad gas. I guess you'll have to decide if it's worth it to give it a try. It's a shame to throw out ham, I know.

No, no, no. Slow and low for turkeys is exactly the wrong way to cook a turkey. Try 500 degrees for 30 minutes to brown up the skin, then 350 until the breast registers 160 with a therm. If the turkey browns too much after the 500 degree blast, use foil to cover. Because the white meat with turkey is so lean, low and slow will only dry it out big time.

At room temperature, the meat is ripe for growth of bacteria. Salt is a good preservative, but there's also a lot of moisture in that ham and I doubt it has enough salt to preserve it.

When it doubt, throw it out. Food poisoning is NOT fun.

There is so much salt in ham - it's fine to eat though it may dry out a bit. I'd put it in the fridge moving forward though...

I wouldn't think so, any meat has to be keep in the fridge.
