Any other kind of salad dressing that you like. Try a little plain yogurt and see if you like the flavor. Cottage cheese might work for you. Hot sauce, A-1 sauce, chili sauce, or tomato sauce is good. I use mustard because I particularly like mustard. A little lemon juice and black pepper is also good. Check out the different specialty dips at a deli. Antipasto is interesting, as well as pesto. Just think about the kinds of flavors you like, and try some of them. Enjoy!

Here's a simple recipe called a Vegan Mayo substitute.

Vegan Mayonnaise Substitute
(Egg and Dairy Free)
Many vegetarians prefer to stay away from animal products altogether, this mayonnaise substitute will help.

1/2 cup of soy milk
1/4 teaspoon mustard
2 teaspoons of lemon juice
Dash of salt
1/4 teaspoon of paprika
6 teaspoons of vegetable oil

Combine the soy milk, mustard, lemon juice, salt, and paprika in a blender. Use a low setting and do not over mix. Slowly add the oil, one drop at a time. This will cause the mixture to thicken. Once all the ingredients have been added, mix until a smooth texture is achieved. As with regular mayonnaise, keep it refrigerated.

Enjoy!!!

Tuna Pasta Salad With Yogurt Dill Sauce

1 cup orzo pasta
3 green onions, sliced thin (tops included)
1/4 cup green bell peppers, minced fine
1/4 cup red bell peppers, minced fine
1 medium roma tomato, diced
1/2 cup kalamata olives, finely diced
1 egg, hardboiled, finely diced
2 teaspoons fresh dill, finely minced
1 tablespoon fresh chives, finely minced
2 teaspoons celery seeds
1 1/2 teaspoons Dijon mustard
2 tablespoons fresh parsley, chopped
2 teaspoons lemon juice
1 cup plain yogurt
1 (6 ounce) can tuna in water, thoroughly drained
1/3 cup freshly grated parmigiano-reggiano cheese
salt
pepper
Cook the pasta according to package directions, drain, rinse under cold water to quick chill, drain well and pour into large mixing bowl.
Stir in green onions, bell peppers, tomatoes, olives, egg, fresh herbs, mustard, and parsley; mixing well.
Add the lemon juice, yogurt, tuna and cheese, mix well; add salt and pepper to taste. Garnish with a sliced bell pepper slice, sliced tomato or additional cheese if desired.
Serve immediately, if preparing to serve later, reserve 1/2 cup of the yogurt to add just before serving as the pasta will absorb the moisture when refrigerated.

For plain tuna salad, leave out the pasta

I make a Mediterranean style tuna salad using tuna, shallot, artichoke hearts canned in water and chopped, kalamata olives, the juice of one lemon, olive oil in replacement of mayo. Salt and pepper to taste. Its very different and very yummy.

Lowfat yogurt, fatfree Italian dressing and mustard. Yummy! The juice from gherkins pickles adds extra flavor, too.
