Search allrecipes.com they have a long list of bread puddings...

You can bake in any container you like...
a glass casserole dish is usually nice for presentation, but you can use those disposable aluminum baking pans (less dishes to do)... just take a peak at it 10 minutes before the specified time in the recipe to make sure the bread pudding is not cooking to fast.

Carmel Bread Pudding

1/2 teaspoon ground cinnamon
1/8 teaspoon salt

I make bread pudding all the time and never have to caramelize any sugar for it... Here's how its done:
Make your loose bread pudding (milk, butter, eggs, sugar, pinch salt, vanilla extract and bread) into a casserole. Place the casserole into a dish that is bigger than the casserole and put boiling water into the outer dish (this is called 'bain marie') Place the two dishes together in a 350º oven till browned slightly on top (40 min?). Then its done.
Caramelized sugar: One cup hot water and 2 cups white sugar in a sauce pan directly on the heat. You may stir to dissolve the sugar, but then do not stir after that. Watch it carefully as it will begin to turn brownish. Stop the cooking process when it is the color you want. Left to sit at room temperature, this will freeze up on you, so use it fast.

To get bread pudding recipes that bake in the oven go to:

Does this bread pudding you want to make have a carmelized sugar top, like creme brulee? I'm not exactly following, but I would think the broiler would work for that. After the bread pudding has baked, turn the high broiler on and make sure to uncover the pudding (if it called for being covered during baking) and leave it under the broiler for a few minutes to carmelize (watch carefully though so it wont burn)

Hope that helps.
