dont boil them.
i do this every week on sunday and they taste great.
Spuds, carrots etc.
part boil, (Dont forget to keep the carrot juice for the gravy)
Put on roasting tin, sprinkle with seasoning to taste, also, balsamic vinegar,(Dont worry about the smell at this point, it goes and then caramalises making the veggies taste really sweet)
double cook them for a better finish!! (i.e slow cook on a low heat, then blast off at thie finish on a high heat)

Steam them.
Put the potato's and carrots in the steamer and steam for about 15 to 20 minutes then add the cauliflower and broccoli for about 4 - 10 minutes, depending on how cooked you want them.
If you are not going to bake the veggies you could always mash the potato's using sour cream and chives. Mix some honey and sesame seeds (toasted) and cover the carrots. Make a cheese sauce for the broccoli or do a cauliflower/broccoli cheese and cover it with a mixture of dry packaged stuffing mix and breadcrumbs before placing it under a grill.

Try tossing them in olive oil rosemary and salt and pepper and roasting them on a medium heat for about 1 hour - they come out really nice, or you could add something like fennel seeds to the broccoli water and some sugar and butter to the carrots if boiling.

The best thing to do is to steam but you can also boil them.
*For, brocolli and cauliflower, season with salt and pepper and then add melted butter before serving.
* For potatoes and carrots, cut them into bite size peices, toss them in olive oil, minced garlic and a little dried rosemary. Bake them in the oven until cooked and the garlic is almost burnt. It really smells good and tastes better than boiling them...

try tray baking the carrots and spuds with plenty of salt and pepper and some garlic and red/white onions.
basically as follows;
chop up spuds as you would to boil, cut carrots length ways into appropriate size 'sticks'.chop onions up roughly(don't dice), put them all in a baking tray, season well and sprinkle some chopped garlic on too. splash of olive oil, give it a mix with your hands and cover with tin foil.
throw in oven for about an hour, you can then either crisp up without tinfoil on or serve up as is.
do you have a steamer for the broccoli and cauliflower? if not use a sieve over a pan of boiling water to steam the veg-will taste much nicer than boiled. takes about 10-15 mins max.
maybe do cheese sauce to go with??

You can boil them in broth...beef or chicken with cilantro or parsley. Even add a bayleaf.
Or season them after steaming or boiling them with Mrs.Dash.
Sear the outsides of the roast beef with garlic,pepper,salt and soy sauce in a frying pan. Then put in a crock pot with broth (bay leaf will tenderize the roast to)and prepare the roast that way then about one hour to it being finished add the veggies. It taste really good to people who love roast!

I'm with the person who said roast the potatoes & carrots.
I have boiled broccoli in some stock & it tastes really nice, I also only *just* cook it so it's only a little soft & I think it keeps more of its flavour.

Try stir frying in nut oil, or roasting carrots and potatoes. Even better try sweet potatoes roasted with parsnips and carrots.
Yum, better than plain old boiled.
OR
When boiled try lightly frying carrots in garlic butter for a glazed effect and they taste yummy.

the broccilli and cauliflower i'd steam then either put butter,salt and pepper on them or cheese sauce. the carrots and potatoes i'd cook with the roast, with onion, salt and pepper.

You can toss veggies like brussels sprouts in a little olive oil and finely minced garlic, if you like garlic.
I like to add a little olive oil and fresh parsley to cooked baby carrots.
My mother used to make a breadcrumb sauce for vegetables like broccoli and cauliflower. Add a little butter or margarine to the pot, mix in some seasoned breadcrumbs and coat the vegetables in it. It's really delicious.
