Personaly, I would NEVER defrost it in water. It is allways best to allow it to defrost naturally in the refrigerator. Depending on the size of turkey, that could be as much as 3 days, or more (remove the wrapping after the first day and cover with cling wrap).

If you mean soaking the turkey to thaw it out for cooking, then no you do not need to add anything to it.
You leave the turkey in the original packaging.The day before you are cooking, Fill your sink with COLD water. Set the turkey in it. Set a timer and every 20-30 minutes change out the water(this will keep the turkey from going bad and keep bacteria out) It will take quite a few hours (depending on size) for the turkey to thaw completely.(sometimes 6-8 hours) Place immediately back in the fridge.

It is always better to thaw in the refrigerator if you have time. It could take 3-4 days to completely thaw.

It is best to allow the frozen turkey to thaw at room temperature over a couple of days than to defrost it in hot water. Defrosting in hot water will take away some of the essential oils and decrease the flavor, drying out the meat as it cooks unless you baste very often. Don't forget to remove the giblet package inside and wash it well prior to baking.

Instead of thawing it in the water, I would just stick it in the fridge for a few days, that way you wont risk the food poisoning issues. Better safe than sick!
