I love a really good lamb tagine cooked in the terracotta tagine with cous cous. The cous cous soaks up the sauce of the tagine and it is superb! There is also the texture contrast as a bonus. There are ways to cook the cous cous so nicely you can eat it on its own. I learned this when I trained at l'Ecole Lenotre the famous culinary school in Paris. Enjoy!

Plain couscous is bland and will take on the flavours of anything you put in it, a big pat of buttr, some fresh herbs and garlic, or chili is nice.You can also add things like pine nuts, sultanas, mushrooms, chopped onion or peppers, use stock cubes or stock to cook it in first

Anything and everything - it's extremely bland and insipid and needs lots of flavours/herbs/spices to make it interesting!
