Candied Sweet Potatoes
2 lb. Sweet potatoes, cooked until tender enough to slice
1 can crushed pineapple (drain off juice and save)
Mix together and put in a greased 8x8 cake pan.
1/4 c. pineapple juice
2 T Butter
1/2 c. Brown sugar
Mix together and boil for 2 minutes. Then pour over pineapple and potatoes.
Bake at 350 degrees for 45 minutes. Remove and set oven to 400 degrees.
2 T Butter
2 T Flour
1/4 c. Brown Sugar
Cut together (like you would do to pie crust) and then sprinkle over the sweet potatoes and bake it for 15 minutes at 400 degrees.

Green bean casserole
2 cans of green beans - drained
1 can cream of mushroom soup
1 can of French's fried onions
1 pound of bacon
Combine the green beans, mushroom soup, cooked bacon, and 1/2 a can of the fried onions in a casserole dish. Bake for 25 minutes. Add the rest of the fried onions on top and bake an additional 10 minutes.

I've been making this for years and never have any leftovers. Cranberry Mousse 1 (6 oz) pkg cranberry flavored jello 1 c boiling water 1 (20 oz) can crushed pineapple 1 (16 oz) can whole berry cranberry sauce 3 tbsp lemon juice 1 tsp grated lemon peel 1/2 tsp ground nutmeg 2 c sour cream 1/2 c chopped pecans or walnuts (optional) In a large bowl, dissolve jello in boiling water. Drain pineapple, setting the pineapple aside and adding juice to jello. Stir in cranberry sauce, lemon juice, lemon peel and nutmeg. Chill until mixture thickens. Fold in sour cream, pineapple and pecans. Chill until set.

orange carrots
1 lb carrots peeled,chopped and cooked set aside in the serving dish.
in a sauce pan
melt two tbls butter/margarine
add 1 1/2 cup OJ (pulp free)
2 tbls cornstarch
stir constantly till thickened then pour over carrots and mix in.
serves 4-6.adjust according to how many you are looking to serve

Try thyme and rosemary potatos. Cut them into wedges on a baking sheet drizzel with olive oil, rosemary, thyme salt and pepper bake at 350 for about 25 minutes or until fork tender,,, Its super easy and yummy too.
