It is countries (not country's) and there are 25 in the European Union as member states, but including all of Europe there are 49.

These are:

This is, of course, if you count the United Kingdom as one country (not separating Scotland, England, Wales and Northern Ireland).

Overall the term "country" is quite ambiguous and some of the ones above could be argued not to be countries, and some other regions could be argued to be European Countries.
