We have an opportunity to see La Rondina, The Medium, Othello, Cavalleria Rusticana and Le Chevalier a la Rose. Are any of these suitable?

to be honest I don't know much about the opera
but just take her to one that doesn't portray situations that are violent. if she is showing a tendency to be musically inclined you should look into getting her started playing an instrument

Take her to a children's opera.
The odds are if you take her to one of the one's suggested she will get figity and disturb others and you will have to take her outside and both of you will miss the show.

all of the above are pretty intense.
Have you tried a pantomime? Great music and child orientated.
