The short answer is that you don't. If the empirical case for the truth of some particular argument is compelling enough, you take it on faith.
The only things that you can actually know for certain are true are those things about which you can have a priori certainty. Tautologies, basically, or things which are necessarily true. "There are 2.54 cm in an inch" is true in a way that "e=mc^2" is not, because one is true by definition and the other is only true if it is born out in practice.
