I've been watching this show for the last few years, did they ever show Nile's wife Maris at all??? Seems like they never showed her

Nope.
Just like on Cheers, they never showed Norm's wife Vera, and they did the same thing with Maris.
In fact, never actually showing her made all the skinny jokes about her even MORE hilarious because you paint this picture of her in your head which is far crazier than any actress they could have found!
Don't you remember when Niles had that dog after he and Maris split up and Frasier and Martin were freaked out because the dog was so frail and skinny that it looked just like Maris? If we had ever seen Maris the dog bit never would have been funny!
