There are sites wiht pumpkin recipies, but it would be nice to hear what your favorite pumpkin one is. Do you have ones that are moist and not dry? Do you have pumpkin recipies?

This question is in the wrong category but I have to share my most recent favorite pumpkin concoction...

Pumpkin Soup... IS DIVINE!!

And Simple to boot... Looks beautiful and is pretty healthy too!

Just cut up a pumpkin into chunks (skin on is fine or you can peel if you like). Boil until completely tender and puree the CRAP out of it! (blender or food processor work fine and add a bit of water or milk to the puree because it will work much better.

Basically, To about 7-10 cups of puree you add about 3 cups of chicken broth (double strength) and 2 cups of milk (if you use evaporated milk only add one cup and add an extra 1/2 cup of water instead of the other cup, if you use powdered dry milk then reconstitute it nearly double strength and use 2 cups).

This should be a little thick still but this is usually GOOD... then add seasoned salt, pepper, some onion powder, celery salt and garlic salt. Just a little of each, really just to taste, you could probably get away with just salt and pepper in a pinch...

Anyway, Cook it up and serve it with a bit of cheese on top or in it, and it is killer with crackers....

Just the thing, as the temperature creeps downward... I love one thing about winter... ALL THE GOOD FOOD and SOUP is a HUGE part of it...

Seriously, you have to try it!

If you want a simplified and delicious way of making pumpkin pies or tarts, just mix together one can of sweetened condensed milk with a 28 oz. can of pumpkin and add pumkin pie spice. (Moist and easy.)

This is my favorite meal with pumkin in. It's actually a Thai clear vegetable and prawn (large shrimp) soup. Perfect for our winter too!

PS The important spice is the peppercorns; the rest is up to personal taste.... but it does taste good with everything!
