Is there any way to restore 'em back to their original "steel" color?

Nah, you don't want that. Bake a few racks of barbeque ribs and let the grease soak into the racks. That'll flavor 'em. Just clean the oven itself when necessary and lightly wash the racks once or twice a year. You're more likely to poison yourself from the cleaners you use keeping the oven spotless than you are to 'catch' something from a little baked on grease. Lighten up and enjoy the flavor, don't let spotless home syndrome ruin your appetite!

Leave them for about 5 Hours soaking in a bath of Biological Washing Detergent!You shouldn't need to scour or scrub-the color should return!

You can try SOS pads, not sure but that is what you would use if it was a pot.
