I can think of somethings like the Statue of Liberty or the Eiffel Tower, but in a thousand years will any of our existing structures still be around and be put in the same league as the Pyramids? Any thoughts?

there already are! there is a list on wonders of the modern times called the Modern wonders of the world and it includes all lots of those big tourist attractions like the Eiffel tower look it up online you'll find the list . I think personnaly that in time these thing could become the wonders of our time .Though not all I say this because the 7 wonders of the ancient world were not one set list they where the lists of writters and historians of ancient times with diffrent opionns of what where the most amazing wonders people looked at these lists to see what should be the wonders of the ancient world . And there was only 30 years when the ancient structeres where all up at the same time. many of them existed only for short periods of time and had to be rebuilt though out time. Though there is not much that you could put in the league of a stucture that was hand made without the convinces of modern time that even today with much of its origannal grandure stripped away it is breathtaking to look at

Hoover dam and the Panama canal. The statue of liberty and eiffel tower are hardly as impressive as those, there just for show and possess no real purpose.

Honestly I don't think so. Pyramids and other ancient wonders were completely built using nature's scrap like sand and large rocks. This made them more flexible to adapt against nature's changes or sometimes disasters.
I don't see anything in modern structures made in such way anymore. But who knows?
