"Size" can mean lots of things. How tall a limestone cliff could be? If you are talking about organic layers, it would basically be how long it's been around for stuff to accumulate. Limestone rock is made up of organic dead stuff (leaves, animals, whatever) that has had so much weight on it it just smushes nito rock. So, the more time dead stuff can accumulate and get smushed into rock, the more layers a chunk of limestone will get.

organic limestone is a sedimentary rock formed from the accumulation of the skeletal remains of sea organisms and lime-secreting sea animals. When these animals die, the calcium carbonate from their skeletons settles to the bottom of the ocean and over time the pressure of all of this calcium carbonate leads to the formation of limestone.
