We are in our 30's and have been dating for a little over a year. These people will probably become my in-laws, so I would like something nice, but not overly extravagant. Any ideas?

get them something from the heart not just something they might enjoy watch them and ask your boyfriend what their hobbies are
and get them something on that meens like for enstence say the dad likes airplane models or something then go on like ebay or somewere and try to find a semi-rare airplane model he doesn't have and if the mom likes cooking think about like something creative like a s'more maker and maybe a cook book of christmas/holiday food.
i think they will like what ever you get them just fine if it come from your thoughts not someone elses.

gift card to a restaurant would be good, maybe some movie passes too for a "date night" how about some Nicorette to quit smoking!!! (I quit 2 years ago, best thing I ever did!)

Then the parents must be near retirement.
