I hate to burst your bubble, but you can't always tell if a girl is a virgin. The hymen may or not be present, it can be broken in lots of ways that don't involve sex, and may not have even been that large to begin with.
So far as judging virginity in guys, that isn't so much a matter of a physical sign as it is a judgement of the lack of experience which usually gives it all away. Most guys are exceedingly nervous their first time, and the entire experience is over with pretty quickly. That would be the best guage of virginity that I know of.
Women have been getting away without notice for centuries, in case you are curious. There is a load of info out there specifically about faking virginity- and that's a lot easier for the girl to pull off than the boy, by the way. Just because she says she is, just because she screams in what you think is pain, and even blood on the sheets- all fakeable, and done. The only thing you can really see proof of, and that takes a doctor- is whether she has had children or been pregnant. Otherwise, it's all a judgement call and her word.

You can't prove that a girl or guy is a virgin or not. However, if you're going to have sex with someone, you should be able to trust their word to you if they are or are not a virgin.

There is absolutely no way to tell if a guy is a virgin. The world has to rely on his word. Doctors cannot tell if a guy has had sex right after he has had sex or masturbated.
