I can speak for F1 as I am familiar with that aspect of motor sports.
None of your answers is actually correct. The drivers drink specially formulated energy drinks with sugar compounds made with complex carbohydrate polymers instead of pure glucose. This to prevent sudden sugar deprivation. These drinks are isotonic energy drinks which deliver rapid rehydration and produce sustained energy. Aside from hydrating the driver with fluids, they boost energy, performace and endurance.
Each team and their physio therapists work hard to create what they believe is the most efficient drink for their drivers during a race. So the types of drinks vary, and they are usually not commercial drinks. Only EJ-10 was a commercial energy drink formulated by F1 experts, and used by the drivers of the old Jordan team (then Midland, then Spyker).

Each driver has their own preference. Water, Sports Drinks - such as Gatorade or Powerade, Fruit Juice, or possibly their own mixture of sorts. I wouldn't think 'high energy' drinks, such as Red Bull are used, due to the high sugar content. The funniest I've ever heard, was at the very first NASCAR Southern 500 at Darlington, when a driver had a glass jug of Tomato Juice! When he wrecked the car, the glass jug broke and the Rescue Crew thought he was 'Horribly' injured! Also heard that a NASCAR driver was reported to have a jug of 'White Lightning', all cars check by Officials, but none found. Remember Frenchman Jules Goux drank several pints of Champagne while on his way Winning the 1913 Indy 500, that is WELL documented.

Usually energy drinks, to keep them hydrated and give them a little refuel in energy during the race. It's normally a 400-550 ml Red Bull can, and the driver can drink when pushing a button.

I can only speak for the one I'm most familiar with, Formula One, and the drink bottles invariably contain nothing more than water, although a driver I once knew flavoured his with a little lemon juice.
