If sugar as we know, is a food . how is it that we can use it as a preservative in fruit and jams etc. What is going on

Sugar is a simple carbohydrate that we use for energy. It can preserve fruits in the form of jams, jellies, conserves, marmalade's, etc. because the high sugar content will not let bacteria, yeasts or molds grow due to diffusion. Diffusion says that water will travel from high levels of concentration to low. The water in the unicellular organisms is drawn out of them.Occasionally mold Will grow on top of a jelly, but it can be skimmed off.Jams and jellies are sealed also in a canning process or at least with a paraffin layer to prevent any growth on the surface.
