Honestly, if there's one that you feel like playing now, play that. It's not like one's made specifically for beginners. But if you don't have a huge preference, I'd recommend Final Fantasy IV Advance (GBA). It's pretty basic, not too hard, it doesn't have too many slow parts in the quest, and it can be beaten rather quickly (about 12-15 hrs for someone who knows what they're doing). The GBA version has some stuff tacked on after the game ends so you can get some more playtime.
Other FFs for the GBA include FF Origins (which are the first two games in the series) and Final Fantasy V Advance. The DS also has FF III. All would be recommended by myself.

FF3 was just released for DS...
FF1 (Orgins PS) I liked it, if you like old school RPG's, you'll love it and the music is beautiful.
FF2(Orgins PS) Pretty good...but be warned it has the strangest leveling up system...
FF3 (DS)- Just released outside Japan for the first time, its on DS
FF4-(PS/Anthology) Comiplied together with Crono Trigger
FF5-(DS/PS) Availble now on DS and playstation one.
FF6-(PS) One of the greatest of the Final Fantasy games, its engrossing and follows the paths of several characters.
FF7-(PS) Following the story of Cloud, an ex-member of soilder. Considered by many to be the greatest RPG ever, its a deep tale, with a great cast of characters, an unforgettable story.
FF8-(PS) The tale of Squall a Seed student who is thrown into a battle aganist an unknown force...for me it was a truly emotional rollercoaster.
FF9-(PS) -Featuring Zidane, after failing to capture the princess his life turns into a giant battle. It has an old-school feel to it and the characters are very kid-like compared to previous Final Fantasy games.
FFX-(PS2) Tidus fines himself a 1000 years into the future in a world plauged by Sin, where only the summoner can save the world.
FFX2-A sequel to FFX, following the story of Yuna on her quest to find tidus...its a very different Final Fantasy game.
FFXII-Haven't played yet..

I think you should Wiki all of them to see which one you like best.
If you want specifics...
I started with X, but that one seemed too long with not much story development. So I grabbed VIII, but the best one is VII. IX can be played if you're bored.
If you like handheld, I say III or VI.
The only bad one I've heard about is XI.

You are right. The DS and gameboy rock! Start there and you are set. They have I, II, III, IV, and V out right now. Start at the beginning and go forward. Won't be long until VI is out.
