Years ago my pumpkin pies had a solid texture, not creamy. I don't know if the canned pumpkin has changed. I have tried less /more eggs, less/more brn sugar, less/more evaporated milk, nothing is working.

boil your own pumpkin and then use your receip for the pie. It will taste better. You can also do that with sweet potatoes but add extra brown sugar and no pumpkin spice.

Here's the recipe for filling for 'The Ultimate Pumpkin Pie'

3/4 cup sugar
1 tablespoon packed golden brown sugar
1 tablespoon cornstarch
2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon (generous) salt
1 16-ounce can solid pack pumpkin
3/4 cup whipping cream
1/2 cup sour cream
3 large eggs, beaten to blend
1/4 cup apricot preserves
