Well, there are a few 600+ cc bikes that I'd consider truly beginner friendly. The Honda Shadow VLX and Suzuki S40 / LS650 Savage are pretty good cruisers. If you're taller, look for a 650 cc dual sport - they're basically huge street legal dirt bikes. Examples include the Suzuki DR650 and the Kawasaki KLR650.
If you're looking at sport bikes, though, a 500 will be plenty of power for a beginning rider. A 500 will keep up with all but the fastest sports cars, while being forgiving and predictable enough not to punish the slightest mistakes by giving you road rash. 600 cc sport bikes tend to have around 100 hp, grabby brakes, and twitchy handling - they're a lot to cope with when you're still trying to get your feet to remember how to shift without having to consciously think about it. If insane speed is what you want, you're best off riding a beginner friendly bike until using the controls become second nature, then getting the supersport of your dreams.

Forget about a big 600cc engine if your a novice. Chances are you'd be much better starting on a smaller bike. Cheaper, safer, get good leathers. Spend a good amount on your helmet. Look out for the other drivers on the road. Good Luck!

Ditto (mad scientist matt) : The Honda VLX is an excellent motorcycle for novice or more experienced riders. I have one (1995, bought new). I rode it, my wife rode it and my daughter will probably inherit it when she passes the BRC.
I also owned a Suzuki Savage 650 and can recommend it.

I had a choicen between a 1000Suzuki and a 600 Suzuki and I picked the 600, I regrete ever doing that, If i would have just got the bigger bike, I wouldn't have nothing to complain about!!!

400-450 cc. is more than enough for a beginner
cheap older bike in good mechanical shape is what you need
brand really doesn't matter

you dont need anything bigger than a 250 for your first bike. get something ugly and cheap, cuase you are gonna dump it a few times.
i got my missus a suzuki gz250 for her first bike....she loves it....its easy to ride, easy on gas and really a nice looking bike for three grand
