I apologize up front for the long answer.
if you are making a CD you gotta include the following
White Christmas - Bing Crosby
I'll Be Home for Christmas - Bing Crosby
Christmas Eve in Sarajevo 12/24 - Trans Siberian Orchestra
Do they know its Christmas? - Band Aid (use the original one)
Simply Having a Wonderful Christmas Time - Beatles
Jingle Bell Rock - Bobby Helms
Sleigh Ride - Johnny Mathis (Boston Pops Orchestra is also very good)
Santa Clause is Coming to Town - Bruce Springsteen
Let it Snow - Dean Martin
Winter Wonderland - Eurithmics
Have Yourself a Merry Little Christmas - Judy Garland, or Bing Crosby, or James Taylor, or Frank Sinatra (any will do)
Happy Christmas (War is Over) - John Lennon
Oh Holy Night - Josh Groban or Celine Dion
The Christmas Song - Nat King Cole
Christmas Shoes - Newsong (this is my favorite)
Home For the Holidays - Perry Como
Last Christmas - Wham
Do You Hear What I Hear - Whitney Houston or... you guessed it Bing Crosby
I was gonna add a second list with optional songs but its already so long, if you want a second CD...
It's the Most Wonderful Time of the Year - Andy Williams
Do they Know its Christmas - Bandaid 20 (NEW one)
Rockin Around the Christmas Tree - Brenda Lee
Merry Christmas Baby - Bruce Springsteen
Holly Jolly Christmas - Burt Ives
Grandma Got Run Over By a Reindeer - Elmo and Patsy
Blue Christmas - Elvis Presley
Rudolph the Red Nosed Reindeer - Gene Autry
Little Drummer Boy - Harry Simeone
I Saw Mommy Kissing Santa Clause - Jimmy Boyd
Wizards of Winter - Trans Siberian Orchestra
Queen of the Winter Night - Trans Siberian Orchestra
Siberian Sleigh Ride - Trans Siberian Orchestra
I would highly recommend anything by Bing Crosby or Trans Siberian Orchestra.
Hope i didn't forget anything... hope this helps.

Santa Claus Go Straight to the Ghetto by Mojo Nixon and the Toadliquors from their album "Horny Holidays". You'll also want to checkout Punk Rock X-mas on Rhino Records and if you can get a hold of Bollox 2 Xmas by Paranoid Visions you will be all set for holiday music.
Barring any of that Fairytale of New York by the Pogues.

Definitely "The Crib in the Crece" by Bill Pere! It has incredible lyrics from the point of view of a homeless man standing outside a church on Christmas Eve. Many people say it's his best song. It's on Bill's album "You'll See a Much Brighter Day," which you can get at CDBaby.com or any related site. By the way, Bill is a National Independent Artist.

John Cougar Mellencamp's version of " I Saw Mommy Kissing Santa Claus" a must have.
Also "Santa Baby" by Marilyn Monroe or Madonna are both good.
"Jingle Bell Rock" by Bobby Helms
and finally "Nuttin' for Christmas" by Barry Gordon (also done by Smashmouth and Rosie O'Donnell)
