Manners is a matter of culture. Most westerners chew food with their mouths closed, Koreans chew food with their mouths open. Both think the others' way is weird. (If you doubt me, go to Korea.)
When manners crosses into hygiene, then it makes a difference. Some cultures think it's normal to cough with the mouth open instead of covering up, or "If nobody saw it, it's okay" (eg. not washing their hands after going to the toilet, picking their noses).
People in several Asian countries eat from communal bowls and think individual bowls are "anti-social"; meanwhile, some of those same Asian countries have twice to three times the rates of hepatitis that western countries have where we eat from a single plate and don't share....

So as not to disgust others. To not offend others.
No one likes being treated rudely.
Having standard ways of doing things is convenient: everyone knows how to act and what to expect, so that every social encounter doesn't have to be negotiated from scratch (which is time-consuming and leaves all behavior open to misunderstanding).

Manners and social customs are in place to help society work smoothly. As we learn our socially accepted customs we come to expect them - and an absence of them can then make us uncomfortable.
Good manners tell the people around you that you have respect for them and that you want them to be comfortable. When you neglect good manners, you will find people don't want to be around you, because they don't know when you might embarass them or otherwise make them uncomfortable.

Who wants to sit a dinner table with someone who chews with their mouth open and reaches across the table and burps and farts? Rude behavior is not nice. When out in public one must conduct themselves with manners and respect and dignity. What one does in their own home is a different story. Bad manners shows your up bringing also.

Who said you do? Who knows for sure what "good" manners are? To some peole, insulting a teacher can be considered a good manner, to some others, it isn't. There's your answer, you don't need good manners, people just choose to have good manners, that's all there is to it. But then again, this is only my opinion.

there's an old saying/belief that good manners demonstrate your respect for OTHERS. a lot of folks think it's about you, but it's actually about being courteous of other people.

i refer to the movie, "blast from the past." it was said that brendan frasier's character said that being a true gentleman means that you are constantly assuring that your guests are always comfortable and good manners just show your respect for them as ladies and gentlemen. i concur.
