After it's cooked in the wok, I put most on my plate and then if I want a sample, I leave some in Tupperware for later.

Ah.... work. Gotcha.

When you work at an agency, you have to collect your own samples along the way. If you forget to take them with you, then you need to find a former colleague who is willing to go scrounge for old collateral (if it's still around). Keep one of everything and gradually put it in your creative folio (or just put it in a big box until you need it, if you're too lazy). If it's tough to take (e.g. board work) and it's a high profile client, take a photo of it (if your company allows it). If none of your old colleagues are still there, you're kind of up a creek without a paddle and will have to verbally describe it to your next employers.

I'm not sure what kind of work you do, but if it's print related (magazine, newspaper, mail, etc.) the vendors should supply the agency with samples. In my experience, these samples go to the client service people, so you might ask them if they have or can get samples of your work.
