I'm not sure which knobs you mean either. But for a long time, I used an ancient mixer with good results. I finally had to toss it when somehow the beaters got bent out of shape- and it still worked well then.

One knob is probably to eject the beaters after you're done. This knob would probably be a bit stiff when you push it. Another one would control how fast the beaters spin.

I'm sorry about your loss. And glad you got this wonderful mixer to continue enjoying.

Now, I did have a thought: Just about everyone has a web site these days. So you can run a google search on Kitchenaid, and when you find their site look up the model mixer you have and see what you find.

Good luck!

So sorry about your loss. I miss my mom to this day and it has been over 20 years.....
My MOM bought me my mixer!!!!!

Your mom had some good taste in mixers.
I studdied food science in college and have cooked professionaly that is why I know about this Company.

Kitchen Aid is one of the best mixers out there. Hobart company used to own Kitchen Aid. I believe Whirlpool owns Kitchen Aid now.
It is actually a scaled down version of a commercial mixer, identical but much smaller (Hobart makes the commercial mixers hospitals, restraunts.... kitchens use and are about 4 feet tall and use 30 gallon bowls. They make the "Rolls Royce" of mixers so to speak. (heavy duty) Mine is only 25 years old.

basically, you have a knob on the left side that has numbers to slide that knob to - these are the speed settings. OFF -10 (High)

You should look around for the 3 attatchments that came with the mixer.
1. Dough hook -for making yeast bread,, pizza dough, dainish.....
Don't go past 4 on the speed setting when using
& don't use any recepie that calls for more than five cups of flower.
2. wire wisk - for whipped cream, whipped butter....High setting
3. Paddle - for cake batter and other batters medium setting

insert one of the attatchments in the center under the "hub" on the mixer and turn the attatchment to "lock" into place

The stainless steel bowl has a clip on each side with a hole in each clip and a knob in the back.
The handle obviously goes to the outside facing you - hold the handle & line bowl up with back knob (pin) Center the back of the bowl to the insertion point on the mixer (under the 2 screws in the back) and line up those holes onto the knobs(pins) on each side of the "arms"

The lever on the right is what is used to "lock" that bowl into place. Now you want to turn that lever on the right to bring the bowl upward to "lock" the bowl into place. Always have the mixer lever(on right) in the lower position when puting the bowl on the mixer. Then you bring it up with that lever on the right.

If there is a round silver cover on the front hub in the center with a round knob to the right of it that you turn (optional extra feature) this is for an extra package purchased seperately (around $100)and is used for making sausage. You would turn the black knob to loosen and remove that silver peice and insert the sausage maker.
I wish I knew where I put the manual that came with it but you may be able to find them on line to get a copy. Your model and serial numbers are printed on the mixer itself.

I hope I have been some help. It is extremely difficult to describe something without a picture - ya know?
