Easy Fruit Salad
1 box frozen strawberries (thawed)
1 can peach pie filling
1 can pineapple chunks
1 can mandarin orange segments
1-2 banana
Mix all ingredients except bananas and chill.
Add bananas when ready to serve.
Easy Creamy Fruit Salad
2 (6 ounce) packages Jello Instant Vanilla Pudding Mix
1 quart buttermilk
1 (8 ounce) container Cool Whip
1 (28 ounce) can fruit cocktail, drained
2 (14 ounce) cans mandarin oranges, drained
1 cup nuts, chopped (optional)
With a wire whisk, combine and mix pudding and buttermilk; fold in the Cool Whip.
Fold in the fruits; add the nuts, and refrigerate.
The fruit salad keeps well in the refrigerator for several days.
You may try other fruits if you like such as cherries, pineapple, and coconut--they are also delicious.

1 (15 ounce) can crushed pineapple, drained (reserve juice)
2 bananas, chopped
1 (10 ounce) package frozen strawberries
1 cup nuts, chopped
1 (8 ounce) package cream cheese, softened
3/4 cup sugar
1 (10 ounce) carton whipped topping (Cool Whip)
Dip chopped banana pieces in pineapple juice to keep them from turning too brown. Discard pineapple juice.
Mix fruits, nuts, cream cheese and sugar in bowl. Fold in whipped topping.
Spread in 9 x 13-inch pan. Freeze until firm
OR
1 package Philadelphia Cream cheese, softened (light works)
2 pints heavy whipping cream
4 tablespoons vanilla extract
1/4 cup powdered sugar
2 tablespoons ground coriander
2 cans pineapple tidbits (well drained)
3 bunches red seedless grapes, halved (you can use the green ones if red are not in season)
1 package miniature marshmallows
4 peeled bananas, quartered and sliced thick
Whip heavy cream til stiff and slowly fold in soft cream cheese till blended.
Add sugar and vanilla extract and coriander, blending til mixed thoroughly.
Begin folding in pineapple and grapes and marshmellows, but wait to add the bananas and only add to the amount you are going to serve.
It works well with most any main course and could actually be used for dessert.
If it sits for a few hours in the frig, or even overnight, the flavors blend, though you want to stir through it before serving, keeping it covered tight in the frig.
This can be spread in shallow pans and frozen and cut in sections and served on lettace as a frozen addition to dinner but leave the bananas out because they turn dark.
