If honey is stored properly it will last FOREVER! Of course...I'm sure it will not last that long to begin with. If crystals start to form its no problem! Simmer a pot of water and put (if its a glass jar) in the simmering water...the honey will "melt" and the crystals will disappear. As far as plastic jars are concerned...I do not recommend purchasing honey in these unless you are the type of person to consume it within a week or two.

Honey will last indefinitely as long as it is not diluted. If it is diluted with water it can spoil or mold quickly. If it hardens (crystallizes) you can use it as is or warm slowly to liquefy it. I suggest that you place the honey container in a pot of warm water. After it has crystallized and been melted it will usually crystallize more quickly the second time. Regardless it is still as edible as it was when fresh.

Pure Honey is the one product that retains its flavor for several months or even years.

Honey never spoils. No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

“Honey doesn’t spoil. Raw honey doesn’t even recrystallize (get sugary).

Storing honey is easy. Simply keep it in a cool location away from direct sunlight in a tightly covered container. It is not necessary to refrigerate honey. In fact, it's much easier to handle if you don't.

Honey may also be frozen, although there's really no need.

Do not be alarmed if stored honey becomes cloudy. This is called crystallization. It is not harmful nor is it any indication of deterioration. In fact, honey has an indefinite shelf-life thanks to its high concentration of sugar. Raw honey with high pollen content will crystallize even faster, and cold temperatures also cause crystals. Crystallized honey is one of the many forms intentionally produced for purchase by many beekeepers.

If your honey crystallizes, you can easily re-liquify it by gently heating the jar in a pan of hot water, stirring while heating.
