Possibly to set an example for His creation that every once in a while they need to sit back and take stock in what they have done. Reflection and rest are definitely good things.
But having given that opinion I can't really say anymore than you can. We'll just have to ask Him what was on His mind someday.

What does God being ALL KNOWING have to do with resting, and being tired?
God rested as an example to us. To show us that we need to take a day every week and devote it totally to Him.

I would submit that HE "rested" for everything to settle and start working as He wanted.
Besides there are 2 points to also consider
1 - humans wrote this
2 - humans mentally could only grasp so much - (or tilted like a pinball game,if you like.) "Rested" is what a human could understand. 2000 or more years ago humans were mentally very different, I'm told.

I suspect he did it just to look upon the results of his labors and take it easy. Back then God was quite easy going, it wasn't until much later that he became ill tempered.
