here`s the situation, we just filed her i-751 forms about a month ago, but didn`t realize the length of time it would take to process.
We both reside in japan for the time being, but we both travel back and forth for business in the u.s., but now that her greencard is expired and we are waiting for a response from uscis, we aren`t sure if she`ll get any forms before our next business trip back. Is there any other options that we can take? That will allow her to enter the u.s. while waiting for a response.

If you've already filed the I-751, you should have received a notice from USCIS extending the validity of the I-551 for another year, which you would then use to re-enter the US along with the expired greencard.

If you did not receive the extension notice, if you were in the US, you would have been able to make an infopass appointment to receive a stamp in the passport to extend the I-551 another year.

Without the extension notice, I think your wife will be denied re-entry to the US. Lying to the CBP and entering as a visitor will not work if her passport is scaned, as all her immigration information is available to the CBP, just by scanning her passport.

if you go to the us with an expired green card ? you probably will be refused entry into the us ,:

If your Green Card was issued about 10 years ago, there is an expiration date on the front of your card. You should check the expiration date to see when your Green Card needs to be renewed. NO, in this situation...the only thing she can do is to go back to her originating country and file. If she has already filed then she must wait it out. If she comes to the US with an expired greencard more than likely she will not make it past the airport however....let's say she did...then she has now committed a crime and is risking loosing all of the papers she has already filed.

ya, just fly to mexico, and bring a lot of water and walk across the border. its winter right now so it wont get that hot.

but for a real answer, you could probably just say you guys are visiting and she can just use a passport to get on the flights, and just stay as long as you need. just make sure that while you are here no cops will pick her up, because then she might get deported.

She doesn't need a green card to just visit, she needs proof she is only here to do business. She will need to have set dates for her arrival, and leaving time, and stick to those dates. Just report the info, and she's good to go! All she needs is a passport, legitimate reason for being here, and a business license.
