I had a recipe from a magazine (Reader's Digest, I think) for Confetti Mashed Potatoes that had celery, garlic, and carrots in it. All of the vegetables were boiled together and, if I remember correctly, there was no butter or margarine added, but may have had broth or milk added before mashing. I'd love to have the recipe for Thanksgiving if anyone has it.

Mashed Potatoes with Roasted Garlic

Roasting rather thanboiling, the potatoes helps to give this classic side dish a lighter, fluffier texture. 2points.

Ingredients
1 1/2lbs Baking potatoes,scrubbed
7 Garlic cloves,peeled
1/3c. Low-fat(1%) milk
2 tbsp. Butter
1/2tsp. Salt
1/4tsp. Freshly ground pepper

Preparation
1. Preheat oven to 425.

2. Pierce the potatoes several times with a fork. Wrap the garlic in foil. Place the potatoes and garlic on a baking sheet. Bake until the potatoes pierceeasily with a fork and the garlic is softened, about 45min. Let cool until comfortable to handle, about 10min.

3. Slit the potatoes with a knife and using a spoon, scoop out the flesh; transfer to a bowl. Mash the garlic with a fork and combine in a small saucepan with the milk, butter, salt, and pepper. Heat the garlic mixture until hot. Pour over the potatoes and mash until smooth.

Confetti Mashed Potatoes
10 servings 40 min 15 min prep

2 1/2 lbs russet potatoes, pared and cooked
1/3 cup low-fat milk, hot but not boiling
1/4 cup carrots, finely diced
1/2 cup onions, chopped
2 1/2 tablespoons parsley, chopped
1 ounce butter or margarine
1/4 cup low-fat mayonnaise
1/2 teaspoon salt
1/8 teaspoon ground pepper

Mash potatoes and milk with a mixer while still hot.

Steam carrots and onion until crisp-tender. Add to mashed potatoes with parsley, butter, mayonnaise, salt and pepper; mix well. Serve 1/3 cup per portion.
