Most everyone OVER COOKS fish. Once it turns opaque, turn it. The second side will take LESS time. You will find that a medium trout in a 375-400 degree oven will cook in LESS than 10 minutes, and will be more tender than 1 that cooks for 20 minutes. Fish will fall apart from being tender, not from being stuck! Even restaurants over cook it, so customers do not complain it isnt cooked. You will also find that GooD chefs will tell you to cook it to a medium rare state.

Rinse fish and pat dry with a paper towel. Whole trout may be stuffed with rice and vegetables. Place whole, boned filleted trout in a baking pan. Brush with butter and oil and season with salt and pepper, or cover with a piquant sauce. Bake in a preheated oven at 400°F (200°C) until a knife slice in the thickest part reveals the flesh to be opaque but still moist.

rule of thumb for fish:
for every 6 oz:
10 min in 400 degree oven.

Well, it depends on the temp and how thick it is and wheter it is wrapped in foil... It is finnished when the flesh is firm and no longer opaque though. I know that much. Just check it and use that as a reference next time.

For a 1lb fish I usually cook it wrapped in foil for 20minutes at 425degrees.
