Hello everyone. I am a full-time chef and recently took on a part-time job at a Gourmet Deli. I make everything from a simple sandwich to full-course catering meals and am looking for some great sandwich idea's.

If it can include the best type of bread to use, that would be a bonus.

So, there you have it.... What's your best gourmet sandwich recipe(s)???

Thanks in advance.... the more answers the better.

This is a sandwhich we made at a deli I worked at in Iowa.

Dagwood Sandwich
Onion Roll
Butter
Turkey-shaved
Ham-shaved
Cotto salami-thin sliced
Provolone-thin sliced
Swiss cheese-thin sliced
Sharp Cheddar-thin sliced
Shredded lettuce
Tomatoes-thin sliced
Red onion-thin sliced

Slice roll in half, butter both cut sides. Layer turkey, ham, salami, provolone, swiss, cheddar, lettuce, tomato, and onion on bottom, place top of bun over all. Wrap tightly in saran wrap, refrigerate overnight.



Loaded Chicken Sandwich
1 boneless, skinless chicken breast
Lemon butter
Chicken spice mix
1 unseeded Kaiser bun, toasted
2 strips bacon, cooked
1 slice Cheddar or jack cheese
2 ounces fresh mushrooms, saut�ed
1 leaf lettuce
1 slice tomato slice
1 spear dill pickle

Lightly baste chicken breast with lemon butter; sprinkle with chicken spice mix. Place chicken, basted-side down on a hot grill; cook 1 minute. Rotate chicken 1/4 turn. Baste and season the top of the chicken again; cook 2 to 3 minutes more. Turn over chicken breast; cook 1 minute. Turn chicken 1/4 turn; cook until chicken has cooked through. Place cooked chicken breast in a baking pan. Top chicken with cooked bacon, mushrooms and cheese. Place under broiler or into a hot oven until the cheese melts. Place the chicken on the bottom half of a toasted Kaiser bun. Top with lettuce and tomato.


PASTRAMI SANDWICH
6 ounces sliced pastrami
2 tablespoons whole-grain mustard
4 ounces beer
3 slices onion rings intact
1 tablespoon oil
Salt and pepper
2 slices rye bread or thick crusty brown bread

Preheat a grill. Season onions with salt and pepper and brush with oil. In a small saucepan combine beer and mustard and bring to a boil. Add pastrami and simmer for 3 minutes.Grill onions on both sides and toast bread on a cooler part of the grill. When all ingredients are heated, prepare sandwich.

My absolute favorite sandwich that I love to make is a take on the california club, without the bacon.

The order of the ingredients is Key:

Flaky crossiant
Mayo (or margarine for a low cal alternative)
Mozzarella cheese (Part skim milk for low cal)
Alfafa Sprouts (but zesty sprouts work great too)
Avocado
Pepper Roasted Turkey
Dijon mustard (or regular yellow mustard works good too)
Flaky crossiant

This is a very simple yet tasty sandwich. Something that is really healthy and very easy to make.

If you want a bread alternative you can use sprouted wheat bread which is what I use when I make it.

I make grilled chicken sandwhiches. I start by roasting a red bell pepper on the grill till it's skin is charred and i can peel and cut it (instant roasted peppers) Then I take some chicken thin cut fillets and spice and put them on the grill. While the cook up I layer on some french bread some fresh mozzeralla cheese, then the chicken and the peppers. I then wrap it in foil, pop it on the grill and let the cheese get all melty and yummy. Serve it with some sweet potato fries or tots and your good to go.

1. CLUB SANDWICHES

12 slices white bread
50 g melted butter
4 small sliced tomatoes
8 small lettuce leaves
8 rashers streaky bacon
8 thin slices cooked chicken or turkey
4 level desert spoons mayonnaise

Toast the bread and remove the crusts, butter 8 slices on one side, the remaining four slices on both sides.
Cover four slices with tomato, top with the bacon, fried with butter until golden and crisp, put those slices buttered on both sides on top, and cover with lettuce and cooked meat.
Spoon mayonnaise over the meat and cover with the last four slices of toast.
Press the sandwiches together firmly and quarter them, spear each with a cocktail stick and serve

2. CROQUE-MONSIEUR

8 square slice of white bread
75g butter
4 slices lean ham
100g grated Cheddar cheese
Fat or oil for frying

Butter the bread and cover four of the slices with ham and cheese.
Top with the remaining bread and press the sandwiches firmly together.
Trim of the crusts, and cut each sand which into three fingers.
Fry the bread fingers in hot fat until golden brown on both sides.
Drain on absorbent paper before serving.

BLT Breakfast Sandwiches:

Check the hollandaise sauce package for the fresh ingredients needed to prepare it.

1 (0.9-ounce) envelope hollandaise sauce mix
6 bacon slices, cooked and crumbled
2 (3-ounce) packages cream cheese, softened
2 tablespoons chopped fresh chives
3/4 teaspoon seasoned pepper, divided
4 sourdough bread slices, toasted
1 tablespoon butter or margarine
4 large eggs
4 lettuce leaves
2 small tomatoes, sliced

Prepare hollandaise sauce according to package directions; keep warm.

Stir together bacon, cream cheese, chives, and 1/4 teaspoon seasoned pepper; spread evenly on one side of each toasted bread slice.

Melt butter in a large nonstick skillet over medium heat. Gently break eggs into hot skillet, and sprinkle evenly with 1/4 teaspoon seasoned pepper. Cook 2 to 3 minutes on each side or until done.

Place lettuce leaves and tomatoes on top of bread slices, and top with fried eggs. Drizzle hollandaise sauce evenly over top, and sprinkle evenly with remaining 1/4 teaspoon seasoned pepper. Serve immediately.

Yield: Makes 4 servings

Oh where to begin! Sourdough, honey wheat, olive bread, pumpkin seed bread, ciabatta rolls, ryes, caraway, many more.

For fillings there's ham and brie with gourmet mustard, muffalettas with olivata, I can't even remember all the ones I used to make at a high end deli!

Here's my "after-Thanksgiving" turkey sandwich recipe. I use muti-grain bread and on the bottom slice I put left over sliced turkey. I then layer some good lean cooked applewood-smoked bacon and a thick layer of swiss cheese. I then broil it until the cheese gets bubbly and I top it off with some honey-mustard sauce.....OH BOY, I look forward to leftovers!!!!!

Here's one I make that's my favorite. It's not elaborate.......but very tasty.

Ingredients:
2 slices jewish rye bread
1 Tablespoon each of thousand island dressing, mayo, and sugar. Blend well.
1/2 teaspoon mustard
1 slice mozzarella cheese
1 slice swiss cheese
2/3 cup of shredded corned beef
Three slices tomato, fried
1 piece of romain lettuce
2 Tbls black olives, finely chopped
Salt and pepper to taste

Fry three slices of tomato in skillet with 1 Tbls butter and set aside.
Take slices of bread and toast them lightly in toaster. On one slice, spread mayo mixture on. On the other, the mustard. Add
the cheeses to mayo covered slice and place in toaster oven until cheese is melted. While that's melting, put the meat and olives into a bowl and heat in the microwave. When toast is done, remove from toaster oven and pile on all other ingredients. Sprinkle with salt and pepper.

Pita Bread Sandwich

The bread has to be freshly made.

Open pita bread partially

Spread with Hummus & Tahini.
Add finely cut slices of roast lamb or roast beef.
Add slices of pickled cucumber.
a couple of slices of grilled tomatoes.

Close and roll up sandwich.
