Japanese cuisine uses pickled ginger to cleanse the palette between eating different things. That's the pink stuff you see on the sushi tray.

I know its used between sushi dishes to cleanse the palet. I haven't heard of it being used for other things.

Most of the time a citrus or a very light flavored sorbet is used to cleanse the palate.
