I love anything Italian.

My favorite recipe is for my Nona's Pound cake. It's a simple recipe:

Ingredients needed:

1 lb. butter or margarine
2 cups sugar
8 medium eggs
3 3/4 cups flour
1/2 tsp. vanilla extract
1/2 tsp. baking powder
6 oz Amaretto

First, cream one pound of butter or margarine until fluffy. I prefer to use the mix setting. Next, add two cups of sugar and mix well. Again, use the mix setting. Now, add the eggs, one at a time, and beat well after each addition. Some mixers have a beat setting. If your mixer doesn’t have this setting, use the mix setting. Then, add three and three quarters cups of flour and mix. It’s best if you add one measuring cup of flour at a time. For this procedure, you can put your mixer on cake mixes. If your mixer doesn’t have this setting, use a setting at one higher speed than mix. Next, add one half teaspoon of baking powder and mix. Now, add one half teaspoon of vanilla and six ounces of ameretto and mix well.

Pre-heat the oven at 325 degrees. Get your bundt pan ready. Use Crisco shortening for this recipe. Grease the pan until the surface is covered. Now, take your batter and push it into the greased pan with your spatula. Then, bake for one and a half hours. During the baking, I check the cake periodically, pushing a toothpick into the cake. If the toothpick comes out clean, remove the cake. Let the cake cool for a while; an hour or two is good. Then, place the cake upside down on a paper plate. Get a cake dish and place the cake right-side up. The fat part of the cake should be facing upwards. Now, add confection sugar and enjoy.

I actually had to write the above for an English Class in College.

My favorite food is pizza, but I also love fruit of all kinds! And this recipe is great, because it's such a different flavor combination for chicken, I love it!

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over pasta.

Swedish Meatballs and Baby Potatoes

1 lb ground beef
2 tablespoons Worcestershire sauce
1 egg
1/2 cup bread crumbs
1 tablespoon milk

1 oxo cube
1 cup hot water

500 mls sour cream

10-15 small potatoes

Mix beef, Worcestershire sauce, egg, milk and bread crumbs together in bowl. Form into small meatballs. If they seem too moist, add more bread crumbs. Fry in skillet until browned.
Dissolve oxo cube in hot water, add to meatballs. Simmer for 20 minutes.
In the meantime boil potatoes. Drain.
Add sour cream to meatballs and gravy. Serve with potatoes.
