Ok, I have the same problem. It's taken years to perfect my system, here it is.

1. To do my hair curly (which is naturally does). I wash my hair with Matrix Sleek Look shampoo and conditioner. Find some here or on Ebay:
http://www.drugstore.com/products/prod.asp?pid=77473&catid=11936&trx=PLST-0-SEARCH&trxp1=11936&trxp2=77473&trxp3=1&trxp4=0&btrx=BUY-PLST-0-SEARCH
Then I towel it a little and scrunch in mousse-V05 for curls. I also spray it with hairspray-White Rain (the cheap stuff works best for me, I've found) and I also spray it with Matrix Iron Smoother. Found here or on Ebay:
http://www.drugstore.com/products/prod.asp?pid=143674&catid=3562&trx=PLST-0-SEARCH&trxp1=3562&trxp2=143674&trxp3=1&trxp4=0&btrx=BUY-PLST-0-SEARCH
Then I let it dry a little by itself and blowdry it upside-down. Try that and see if it works.

2. For straight hair. I wash it with Redken Clear Moisture. Find here:
http://cgi.ebay.com/REDKEN-CLEAR-MOISTURE-SHAMPOO-CONDITIONER-LITER-HAIR-NR_W0QQitemZ120053372254QQihZ002QQcategoryZ47009QQssPageNameZWDVWQQrdZ1QQcmdZViewItem
Then I spray it with the Iron Smoother and let it dry naturally or dry it a little on a low setting. Then I use a flat iron to straighten it. Afterward I always have to use more Iron Smoother for the fly-aways and sometimes some leave-in conditioner too. Give these methods a try and see what happens. Good luck!

Try a hot oil treatment? Or exploit your poofy hair to the max! Cut it shortish and wear headbands to hold the front part of your hair back tightly and let it go crazy in the back!

Just some ideas.

chemical-straightening. that's what my friend does and it really changed the way her hair is. it looks naturally straight now, but remember the hair growing in will still be like it is now, so every 3 months or so get it done.
