OLD FASHION EGG CUSTARD PIE
4 tbsp. sugar
1/4 c. butter
4 eggs
2 c. milk
3 tbsp. flour
Mix well. Pour into uncooked pie shell; sprinkle with nutmeg if desired. Bake at 300 degrees until custard is set and lightly brown.
SWEET POTATO PIE
2 c. mashed sweet potatoes, canned or fresh cooked
1 c. granulated sugar
1/2 tsp. salt
1 tbsp. pumpkin pie spice
3 eggs, slightly beaten
1 lg. can evaporated milk
2 (9 inch) pie shells, unbaked
Mix sweet potatoes, eggs, sugar, spices, salt and milk. Pour into 2 unbaked pie shells. Bake 10 minutes at 400 degrees. Reduce temperature to 325 degrees and bake approximately 40 minutes or until pie is set in center.

Delicious Sweet Potato Pie Recipe
Sweet potatoes were another staple I
grew up with. They were fairly inexpensive
and were great baked or put in a pie. Baked
potateos were just eaten with a little butter.
To make a potato pie, you need:
4 large potatoes
2 beaten eggs
1/2 cup heavy cream
2 cups brown sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
Can us 2 cans of sweet potatoes but dring the liquid.

Wash potatoes, wrap in clear wrap and cook 10 mins on one side and 7 mins on the other side on high in microwave. Rinse them off with cold water and peel them the skin just comes off.
Let the potatoes cool and then peel them.
Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.
Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.
Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.
I like to eat the pie while still hot. It's
good cold too though.
If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meiangue, you can add the egg yokes
to the pie if you like.

This is short and sweet. 3-4 medium sweet potatoes, boiled with skin on. Boil till tender. Take large mixing bowl and add as follows, Mashed potatoes, 1 stick butter, 1 cup sugar, 2 eggs 1 teaspoon cinnamon, and 1 teaspoon of each, vanilla and coconut flavoring. Mix all ingredients well and pour into 2 deep-dish pie crusts. Bake at 375 for 45 minutes. You can substitute 1/4 cup of OJ instead of the coconut flavoring for a different taste. (Delicious)

Sweet Potato Pie
1 cup packed baked sweet potatoes (peeled)
3 eggs, slightly beaten
2 (3 ounce) packages cream cheese, softened
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon (optional, but preferred)
1/4 teaspoon nutmeg (again, optional)
1/4 cup butter, melted and cooled
1 unbaked 9 inch deep dish pie shell
Run sweet potatoes through a sieve or mash with fork.
Add all the other ingredients to sweet potatoes and mix with mixer.
Pour into an unbaked, deep dish pie shell.
Bake at 350 degrees for 20-30 minutes or until set.
Egg Custard Pie
1 (9 inch) unbaked pie shells, deep dish
3 eggs, beaten
3/4 cup white sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg white
2 1/2 cups scalded milk
1/4 teaspoon ground nutmeg
3 drops yellow food coloring (optional)
Preheat oven to 400 degrees F.
Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add a few drops yellow food coloring.
Brush inside bottom and sides of pie crust with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
Bake for 30 to 35 minutes or until a knife inserted near center comes out clean. Cool on rack.
