outside of a restuarant, the sign says Trip sandwich, would this be some kinda of fish?

It is tripe. That is one of the stomachs of a cow that helps it digest the cud that they keep chewing to get the nutrition out of it. It has a surface like a honeycomb. If cooked wrong it tastes like an inner tube. If cooked by someone who knows how to deal with it correctly it is great to eat.

On the assumption that the food-preparer in that place is a better cooker than a speller I would be tempted to try it.

well I am thinking it's either a misspelling of tripe, which is Not a fish... more like stomach tissue of certain animals

... or perhaps some sort of hallucinogen infused bologna on rye toast? In any case: I wouldn't eat there.

I'm sure that they lost their "e" in tripe, but just the same I like the acid infused balony idea! j/k

They may mean tripe -- which is sort of the same as innards. Ewww.
