Or do I have to do something special to them before putting them in the freezer ... or better yet ... will they last refrigerated until Thursday?

Go ahead and cook those puppies up (great with hamhocks or smoked turkey for flavoring) and freeze them for your Thanksgiving. In generations of my family we have kept cooked collards frozen for year round access.

Just cook them like you are getting ready to serve and freeze them and youll be okay .but if you freeze them now it may make them difficult to get ready to prepare to eat.I always wash mine real good after i have pick through the green and removed the stems etc ,put them in a larger pot with a Small amount of chicken broth and a ham hock or hog jowl and let them cook down until tender,at this point put them a container and just frees or they will do okay just sitting in frig until thanksgiving and will taste better than greens just cooked all the flavor has time to blend overnite.. Good luck and i'll bring some cornbread and hot pepper sauce..I mix mine with poke greens and they are good i raise a nice garden and have greens and all that stuff thak God..

No, you can't freeze them. I would wrap them in a moist paper towel and put them in the crisper part or your fridge. Maybe even put them in a zip top bag, but check them to make sure that they aren't getting slimey.

If they are fresh you can place them in a Ziplock Baggie and place them in the freezer. They will keep.

i would cook them , & then freeze them, then just heat them up for thanks giving.
