My 3 yr old eats what I put in front of her, or she doesn't eat. I can tell when she actually doesn't like something and when she is being difficult. I don't make her eat spicy stuff, or things that are an aquired taste. She doesn't like broccoli or cabbage, so I don't make her eat them. But if she doesn't eat what everyone else is eating (as far as the main entree is concerned) She doesn't get anything else for the rest of the evening (or until the next meal is ready if she refused to eat lunch) And there is absolutely no "Ew, gross" or "Yuck" speach in my house at all.
She is very good at eating things that most kids wouldn't eat because they aren't expected to. I think it is rediculous to make something special for a 3 year old just because they want to be difficult. It just teaches them that being difficult helps them get their way.
Make whatever and tell them to eat it or nothing at all.
Eventually they will learn that if they want dinner they will eat the dinner that is made.
BTW, my daughter and I are very close and she loves me even though I am hard on her sometimes. Don't be afraid that the kid will stop loving you. They need these kinds of lessons for life.

First of all make a list of the things she likes to eat. You could also try to interest her by getting her input for the family meals like: spaghetti, mac n cheese, fish sticks/chicken nuggets, etc. If you make her feel like she has a valuable opinion she'll take more of an interest in eating.

Just about anything that can be cut up into toddler bite sizes.
Here we use fruits, fruit cups, veggies, dips for veggies.
Gold Fish, cheese and crackers, cereal (kiks, cherrios)
Rasins, yogurt rasins, yogurt, puddings.
Meals:
Chicken, hot dogs, hamburger, fish sticks, sandwich meat rolled.
Rice, potatoes, corn bread w/butter.
My kids even eat lettuce salad from the bags... I eat it, they love it (guess because I am eating it)
When I make PB&J and other sandwiches that are fair sized I use cookie cutters to make the sandwiches into shapes!
Mac & Cheese with hot dogs and corn.
If you are concerned she is not eating enough you can buy Pediasure (they use this with children who are at risk for nutrition problems and is sold over the counter as a supplement).
Remember they can be very very picky. Just continue to offer a large variety.
Don't over do spices and such extras.
Keep it simple for her.

If she does not feel good scramble eggs with toast and fruit juice
Does not like to eat make a P&J and cut the bread in shapes

something to dip. My son will be 3 in just a few days. He used to not eat anything. Now if he has problems with eating, dipping helps. He uses anything from applesauce, ketchup, or peanut butter for dipping.
