My sister and I bake a lot of wedding cakes and vanilla is usually the most popular, with some fillings here and there which are usually apricot, and strawberry. Best vanilla cake really depends on your taste. There's a lot great vanilla cakes out there. Vanilla rates number 1 in my book.

Citrus Flavors-Orange, Lemon, Lime. Combination fruit and citrus cakes (rasberry and lime) The Citrus cakes do well with Chiffon as the cake base and simple syrups derived from the actual fruit you are using (Citrus only) Stay away from Blood Orange as a flavor-because it is inconsistent. Liquor Based Cakes are really big right now-especially Grand Marnier. Fruit-But it depends on what is in season.

My husband and I chose marble cake with bavarian cream filling for each of our tiers-because we wanted all our guests to have the same flavor experience, we decided against having each tier being different (and that usually adds more expense on to an already pricey confection!!). It's sometimes a good idea to choose a flavor combination that most people would be willing to eat, like traditional pound cake or white cake with a simple cream filling, or if choosing a fruit filling, going with something like a chocolate cake with strawberry filling, or even a lemon cake with a raspberry filling. Red Velvet with cream cheese filling is another fairly romantic cake choice. Generally, carrot cake is questionable, because not everyone likes it. I wish that was better advice- decide on a couple flavor combinations you are tossed between, and ask for those: like choose a traditional combination, a more adventurous one, and then your favorite cake flavor...and use the tasting to see what the quality of their cake is (moist? Dense?), and their fillings (Heavy? Gooey?), and make an educated choice from there.
