ANGEL HAIR PASTA WITH SHRIMP &
BROCCOLI

8 1/4-inch medium shrimp
3 large garlic cloves
1/2 tsp. salt and pepper
6 tablespoons olive oil
6 tablespoons butter
1 bunch of broccoli, cut up
8 oz. angel hair


Marinade:

Toss together: Shrimp, garlic, salt and pepper, 4 tablespoons olive oil. Marinate the shrimp for 3 hours in the refrigerator.

After marinating, remove the garlic pieces. Add 3 tablespoons butter.


Pasta:

In a large saucepan, add broccoli and bring to a boil. Drain and return to saucepan; cover.
Editor's Note: Do not overcook. Broccoli will continue to cook after removed from heat. It should be a bright green color - emerald green, not olive green. Olive green indicates the broccoli has overcooked.

Heat 2 tablespoons olive oil and butter. Add shrimp and saute, tossing often.

Cook pasta. Drain and toss everything together. Serve.

Cooking Angel Hair is very fast in salted boiling water, when it's limp it's ready, that's the last thing you do before you plate.

Sunkist Orange Lemon Angel Hair Pasta

Ingredients:

1 cup Sunkist fresh-squeezed orange juice
1 cup Sunkist fresh orange segments, diced
1/2 cup Sunkist fresh lemon segments, diced
1 cup Olive oil
6 tablespoons Garlic, minced
8 tablespoons Fresh basil, chopped
1-1/2 pounds Angel hair pasta, cooked, warm
4 tablespoons Parmesan cheese, shredded

To make one portion:

Combine 1/4 cup Sunkist fresh-squeezed orange juice, 1/4 cup Sunkist fresh diced orange and 2 tablespoons diced lemon segments, with 1/4 cup olive oil, 1-1/2 tablespoons garlic and 2 tablespoons basil.

Toss 6 ounces warm pasta with Sunkist juice mixture.
Sprinkle with 1 tablespoon Parmesan and serve immediately.

Option: For each serving, add 4 ounces of warmed grilled chicken strips or 5 cooked shrimp to Sunkist juice mixture and then toss with pasta

You can make a frittata out of cooked angel hair pasta. It's almost like a quiche, but no crust. Just mix the eggs/milk/seasonings with the pasta and toss in a dish and bake!

"Angel Hair with Caviar" - 6 servings

8 oz. angel hair pasta or very fine egg noodles
1 cup plain yogurt
3/4 cup light cream
1/4 cup butter or margarine
2 tbsp. chopped parsley
2 hard-cooked eggs; diced
1/2 cup golden caviar or black caviar; drained

1) Cook pasta as label directs; drain in colander and keep hot.
2) Meanwhile, in 1-quart saucepan over low heat, heat yogurt, cream, butter, parsley and eggs until hot, stirring occasionally. Pour into large bowl. Add hot pasta; toss with cream mixture to coat well.
3) To serve: Divide pasta onto individual plates; top each serving with heaping tablespoon caviar. Yields 5 1/2 cups.

I make chicken soup with angel hair pasta. Add tha pasta to the chicken broth and cook a few minutes. Serve with drops of lemon .Yum.

Boil a bag of broccoli
stir fry some chicken strips ( unbreaded )
cook the pasta well,
add the broccoli to your chicken fry blend well add spices.
drain pasta, and mix with your chicken fry blend.
add a sauce or eat as is.
maybe squeeze a lemon over the mix before eatting.

after making angel hair pasta add in a side of steamed broccoli and pour olive oil and garlic on top
how about sundried tomatoes with olive oil and garilic and zucchini also

Chicken Spaghetti Casserole
1 Stick Butter
1 cup chopped onion
1 small Package of Angel hair pasta
1 LB Velveta Cheese ( good with the spicy cheese if you like)
1 can Mushroom Soup
1 small jar pimentos drained
Potato chips
4 chicken breasts

Boil chicken breasts until done. About 40 min.. Remove and cool enough to handle. Cook pasta in water from chicken about 14 minutes or according to directions on box. Drain in colander. Cut up chicken in bite size pieces and mix all ingredients together except for potato chips. Use a large casserole dish. Crush potato chips and put on top of chicken/pasta mixture. Bake until brown and bubbly in a 350 degree oven. About 6 servings. This is great for taking to a pot luck or a party.


Shrimp Lemon Pepper Pasta
1 (8 ounce) package Angelhair pasta
1 tablespoon olive oil
6 cloves garlic, minced
1/2 cup chicken broth
1/4 cup white wine
1 lemon, juiced
1/2 teaspoon lemon zest
salt to taste
2 teaspoons freshly ground black pepper
1 pound fresh shrimp, peeled and deveined
1/4 cup butter
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil

Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 9 to 13 minutes or until al dente; drain. Heat oil in a large saucepan over medium heat, and saute garlic about 1 minute. Mix in chicken broth, wine, lemon juice, lemon zest, salt, and pepper. Reduce heat, and simmer until liquid is reduced by about 1/2. Mix shrimp, butter, parsley, and basil into the saucepan. Cook 2 to 3 minutes, until shrimp is opaque. Stir in the cooked pasta, and continue cooking 2 minutes, until well coated.


Chicken Scampi
(1/3) pound butter
(2 tablespoons) garlic puree
(2 tablespoons) chicken base (Minors or Tone brand)
(8) fluid ounces Chablis (any dry white wine)
(8) fluid ounces water
(16) fluid ounces heavy whipping cream
(1 1/4) teaspoons) Italian seasoning
(1/2) teaspoon coarse ground black pepper
(1/2) teaspoon crushed red pepper
(2 1/2 teaspoons) fresh chopped parsley
Angel hair pasta

Melt butter over low heat; do not let it get it brown. Add garlic puree and let sweat for 2 minutes add remaining ingredients and simmer for approximately 10 minutes. Amounts in parentheses are for approximately 2 quarts.For garlic, roast 2 to 3 heads of whole garlic. Slice off top until you see cloves and pour approximately 1 tablespoon olive oil over each head. Put in oven at 325 degrees F for around 1 hour or until they smell sweet. After they cool, squeeze cloves out of the papery stuff and coarsely chop.Cut up green, red and orange pepper into strips also red onion (1/4 by 1 inch strips). They measure, per serving, 1 1/2 ounces green pepper, 1/2 ounce red and orange pepper and 1/2 ounce red onion and 1 ounce roasted garlic. These are sautéed with the chicken. This is the only part that is not authentic. Marinate chicken in Marzetti's lite ranch dressing, adding 1 tablespoon garlic puree and fresh parsley. Use fresh chicken tenderloin strips. There are 5 of these per serving. You will cook the sauce while that simmers. Saute chicken and veggies and toss with the amount of sauce ( approximately 6-8 fluid ounces per serving) toss hot angel hair pasta in. If you want less fat, evaporated milk also works in place of the cream. Mix pasta and sauce together. Place in dish and top with chicken strips and pepper garnish.
